After the holidays, it’s all about hunkering down. To help, I’m making January about comforting chicken recipes. These are easy to make and are the perfect meal for those cold, gray days.
• 2 large chicken breasts, cut in quarters
or 1lb boneless chicken cut in equal pieces
• ¼ C EVOO
• ½ C Red wine vinegar
• ¼ C fresh oregano or 3 T dried
• 2 T chopped fresh garlic or 1 tsp granulated
• 2 tsp salt
• 1 tsp pepper
Place all ingredients in zip bag and marinade over night. Spray roasting pan and and dump contents of bag in pan.
Bake at 400 for Bone-In – approximately 30-40 minutes until fully cooked
Bake at 35 for boneless – approximately 25-30 minutes until fully cooked
I serve over jasmine rice. Delish!
